The name Listada de Gandia refers to the vivid, purple and white striped fruit’s appearance, and its source. Gandia is the capital of La Safor County in eastern Spain.

This petite eggplant (about 6 inches) has more delicate skin than the big ones you see in the market.

The flavor is mild, nutty, and perfect for breaded slices as well as diced and steamed with squash, onions and peppers.

Eggplant has been cultivated in southern and eastern Asia since prehistory. The first known written record of the plant is found in Qimin Yaoshu, an ancient Chinese agricultural treatise completed in 544.
